It is back to basics with Mike Hicks, donut maker at Hole and Pizza maker at All Souls Pizza in Asheville, as he introduces us to sourdough hearth breads. In this course we will make from start to finish two different styles of sourdough loaves: a darker country style loaf and a lighter, softer white bread. This class will cater to beginners; however, we will be touching on some more in-depth concepts. You will learn about the full process of making sourdough bread and leave with the confidence to make your own at home! We will discuss gluten development, fermentation rates, whole grains, and learn the keys to shaping and scoring your sourdough breads. There will be some opportunities for hands-on participation, too.

AND…You will also be going home with some of Mike’s personal sourdough starter, Cheryl — a starter that has been maintained for over 100 years!
This class is demonstration style, with opportunities for hands-on.  Sit back and enjoy as baker Mike creates and then enjoy the delicious bread he makes!

We will have chilled water for you during the class; however, you are welcome to bring your own sip.  We will have wine glasses for your beverage, should you choose to bring one.  We do ask that you do not bring hard liquor.

All reservations for our classes are non-refundable, however, they are transferable to another guest.  In the event you are unable to attend a class, please call the shop at your earliest convenience and provide the name you are transferring your reservation to.  If you are unable to find a replacement and there is a waitlist for the class, we will do our best to fill your spot. If we are successful, we will apply your fee to a future class.
