The series in Breaducation continues, this time we delve into everyone’s favorite — Pizza. Pizza is my greatest professional passion, and I’m so excited to share with you my knowledge from many years in pizza kitchens. 
 
 In this course we will make pizza dough from start to finish. Starting with the mixing process, shaping, and finally stretching to its final form. There are many different ways to achieve a wonderful pizza, and we will discuss the choices to arrive at your ideal pie. Whether you prefer a naturally leavened (sourdough) pizza, or a more traditional yeasted pie — we will cover both and how each dough performs. We will discuss our different choices for flour, fermentation times, toppings, and stretching techniques. This class will be my most hands on to date! I want everyone who attends to have an opportunity to stretch and toss pizza dough, and gain the confidence to show off their new found pizzaiolo skills! There will be plenty of pizza served throughout the workshop, as well as a salad to balance things out. As a bonus, I’ll be sure to prepare one of my favorite salad dressings with the class! Don’t forget your favorite bottle of vino to pair with our evening of learning and indulgence. 
 
This class is demonstration style.  Sit back and enjoy as baker Mike creates and then enjoy the delicious pizza he makes!

We will have chilled water for you during the class; however, you are welcome to bring your own sip.  We will have wine glasses for your beverage, should you choose to bring one.  We do ask that you do not bring hard liquor.

All reservations for our classes are non-refundable, however, they are transferable to another guest.  In the event you are unable to attend a class, please call the shop at your earliest convenience and provide the name you are transferring your reservation to.  If you are unable to find a replacement and there is a waitlist for the class, we will do our best to fill your spot. If we are successful, we will apply your fee to a future class.
